No Mayo Coleslaw
INGREDIENTS
- 1 head green cabbage 
- 1 large red apple julienned or thin sliced 
- ¼ - ½ red onion thinly sliced 
- 3 tbsp. coarsely chopped mint 
- 2 tbsp. lemon juice* 
- 2 tbsp. olive oil* 
- 2 tsp. apple cider vinegar* 
- 1-2 tsp. white wine vinegar* 
- Salt* and freshly ground black pepper* to taste 
DIRECTIONS
Slice the cabbage in half, remove the core, and finely shred the cabbage using a mandoline. If you don’t have one, use a sharp knife and shred as thin as you can. The thinner the cabbage, the better! Combine all the other ingredients in a large bowl and mix together. Taste the coleslaw as you go to see if it needs any more acidity, moisture, or salt! Enjoy!
